Cajun-style chicken

Ingredients

  • 1 small soft cheese (around 150g) such as Boursin, or cream cheese, flavoured with herbs and garlic
  • 1 free-range chicken

For the marinade

  • 8 garlic cloves
  • 2tbsp ground piment d’Espelette or hot paprika
  • 2tbsp herbes de Provençe (usually marjoram, oregano, rosemary and thyme)
  • 2tbsp paprika
  • 4tbsp olive oil
  • juice of 1 lemon

Method

For the marinade, peel and slice the garlic. Combine with the piment d’Espelette, herbes de Provençe, paprika, olive oil and lemon juice. Season.

Combine the soft cheese with 2tbsp of this marinade and place inside the chicken. Massage the chicken with the rest of the marinade, rubbing it in well. Keep in the fridge for 24 hours.

Barbecue the chicken over a gentle heat, covered, for 1 hour, turning it from time to time. Cut up the chicken and serve drizzled with the cheese that has melted inside during cooking.
