Dirty Bones’ Key Lime Pie
Makes 1 Drinks
Ingredients
- 5 egg whites
- 25ml limoncello
- 75g sugar
- Zest of 2 limes
- Juice of 1 lime
- 35ml gin
- Ice
Method
Whip together the egg white, sugar and lime zest in a bowl and get it as stiff as you can. Leave to chill.
Fill a shaker with ice and add the gin, lime juice and limoncello. Shake, then pour into a martini glass.
Gently spoon on the egg white mix and blacken with a blowtorch if you have one, though it’ll taste just as good if you don’t.
