Grilled beef fillet with wasabi crumbs

Ingredients

  • 600-700g beef fillet, trimmed of sinew and excess fat, or sirloin or rump steak
  • extra virgin olive oil
  • 50g butter
  • 1 garlic clove, peeled and finely chopped
  • 1tbsp wasabi paste, more or less to taste, from specialist Asian food stores or, if unavailable, horseradish or mustard
  • 50g coarse breadcrumbs or panko crumbs
  • 1tbsp chopped chives meat stock (optional), to serve

Method

Turn the grill to a medium-high heat. Cut the beef into eight slices and lightly season, then brush with olive oil. Pan-fry or grill the beef to colour on both sides, then lay the slices of beef on a lightly greased baking tray.

Melt the butter in a medium saucepan, then add the remaining ingredients and a little salt and mix together. Gently but firmly press the mixture on top of each piece of beef, then grill until the crumbs are golden brown and sizzling.

Serve on hot plates drizzled with meat stock, if using. The fillets and stock go well with mashed potato and a crisp green salad.
