King prawn and spring onion scramble

King  Prawn  Spring  Onion  Scramble

Ingredients

  • 2 large eggs
  • 2 tsp olive oil
  • 1 large spring onion, sliced on the diagonal
  • 75g cooked king prawns
  • 1 tsp toasted sesame oil

Method

Crack the eggs into a bowl and whisk for a few seconds. Heat the olive oil in a non-stick frying pan, add the spring onion and prawns and sauté until the onion begins to soften and the prawns are hot. Push them to one side of the pan to keep warm. Add the whisked eggs to the other side of the hot pan and stir continuously until they reach a scrambled egg texture. Serve the spring onions and prawns over the scramble, drizzle over the sesame oil and season with salt to taste.
