Papaya and peanut salad

Ingredients

  • 1 small papaya
  • 200g sugar snap peas
  • 2 spring onions, finely chopped
  • 2tbsp fresh basil, finely chopped
  • 2 little gem lettuces, finely chopped
  • 50g toasted peanuts

For the dressing

  • juice 1 lime
  • 1tbsp tamari or soy sauce
  • 1tbsp ginger, peeled and freshly grated
  • 1tbsp tahini
  • 1tbsp maple syrup

Method

Peel, deseed and cut the papaya into thin slices. Cut the sugar snap peas diagonally into thin strips.

In a small bowl, whisk together the dressing ingredients.

Mix the papaya, sugar snaps, spring onions, basil and lettuce together with the peanuts. Pour over the dressing and serve.
