Ingredients

  • ¼ cucumber, peeled in strips
  • a small piece of peeled ginger
  • 4 yellow tomatoes or 8 cherry
  • 1 small red onion, finely chopped
  • juice of 2 limes
  • a small handful of mint leaves, roughly chopped
  • a small handful of coriander leaves, roughly chopped, plus sprigs
  • 1tbsp maple syrup

Method

Cut the cucumber in half lengthways and remove the bulk of the seeds with a spoon. Cut into small dice and put in a serving dish. Grate the ginger over the cucumber and stir. Cut the tomatoes in half and remove the core, cut into small dice and add to the dish. Add the onion and lime juice, herbs and maple syrup and mix well. Leave for 30 minutes to 1 hour before serving.
