Bitter gourd stir-fry

Ingredients

  • One medium bitter gourd, deseeded, sliced
  • 40g grated carrot
  • 2tbsp olive oil
  • 350g firm tofu, cut into cubes
  • Pinch of salt
  • Japanese soy sauce
  • 1 medium egg, beaten
  • 40g bonito flakes

Method

Cut the bitter gourd in half, scoop out and discard the seeds and slice each half thinly. Set aside.

Heat the olive oil in a wok or heavy frying pan. Once the oil is hot, break the firm tofu in large chunks into the oil. Immediately add the bitter gourd and stir-fry until the vegetable is 70 per cent soft (or according to your taste, depending on whether prefer it soft or crunchy).

While stir-frying, season with salt and a dash of soy sauce. Add the carrot, stir-frying all the while. Finally, add the beaten egg, followed immediately by the bonito flakes.

Stir-fry a moment longer, mixing all the ingredients together, before serving immediately.
