Makes Enough To Marinate 1-3kg Meat Sauces and accompaniments

Ingredients

  • 400g salt
  • 400g sugar
  • 12g garlic
  • 30g fresh root ginger, sliced
  • 4g bay leaves
  • 20g sage leaves
  • 10g rosemary sprigs
  • 20g soy sauce
  • zest 2 lemons

Method

In a medium pan, bring 2 litres water with the salt and sugar to the boil. Take off the heat, add the remaining ingredients, cover with a lid and allow to cool.
