Combine the sherry, lemon juice and simple syrup in a shaker without ice and dry-shake for around 30 seconds until combined. Pour into a double old-fashioned glass filled with crushed ice, float the crème de cassis on top and serve.
For the simple syrup
Combine the sugar and water in a blender and purée until the sugar is dissolved. Alternatively, combine in a non-reactive lidded jar and shake until the sugar is dissolved. Seal and store in the fridge for up to 4 weeks.
