Makes 50 Desserts and puddings
Combine the butter, icing sugar and a pinch of salt in a mixing bowl. Add the egg, then sift in the flour and cocoa powder. Fold through the pistachio nuts, then place the dough in the fridge for 1 hour.
Preheat the oven to 190ºC/ 374ºF/Gas 5. When the dough is firm enough, shape it into a large sausage shape and use a sharp knife to slice into individual biscuits 5mm thick. Arrange the biscuits on baking trays lined with baking paper and bake for 12 minutes before serving.
