Cinnamon sugar popovers with warm honey

Makes 6 Cakes, Bread and Pastries

Ingredients

  • 70g plain flour
  • 2 large eggs
  • 1tsp vanilla extract
  • 100ml milk
  • 6tsp vegetable oil
  • 2tbsp honey

For the cinnamon sugar

  • 30g granulated sugar
  • 1tsp ground cinnamon

Method

Make a batter by whisking the flour, eggs, vanilla extract and milk in a large jug until no lumps remain and put in the fridge to chill for at least 20 minutes. Preheat the oven to 230C/210C F/Gas 8.

Pour 1tsp vegetable oil into each hole of a 6-hole muffin tin and put in the oven to get hot.

Once the batter has chilled, remove it from the fridge. Remove the tin from the oven and pour the batter directly into each muffin hole. Bake in the oven for 20-25 minutes until the popovers are golden brown and really puffed up. Transfer to a wire rack.

Mix together the sugar and cinnamon in a large, shallow bowl. After the popovers have cooled for a few minutes, remove from the tin and dip each popover into the cinnamon sugar mixture. Warm the honey for 10-20 seconds in the microwave, drizzle over the top and serve immediately.
