Classic Waldorf salad

Serves 4 Starters and mains

Ingredients

  • 50g seedless grapes
  • juice 1⁄2 lemon
  • 50g walnut halves
  • 6tbsp mayonnaise
  • 1⁄2tsp Dijon mustard
  • 2 Little Gem lettuces, roughly chopped
  • 2 sweet, juicy eating apples, such as Cox’s, cored and sliced
  • 2 celery stalks, sliced

Method

Preheat oven to 180C/160C Fan/ Gas 4. Place the grapes on a baking sheet and squeeze over the lemon juice. Bake in the oven for 10 minutes until they start to shrink. Add the walnuts and cook for a further 5 minutes, until toasted. Set to one side to cool.

Next, mix the mayonnaise and mustard together in a bowl with a pinch of salt and pepper.

Put the lettuce leaves, apple slices and celery into a serving bowl. When the walnuts are cool, add them and the grapes to the bowl. Add the mustard-mayo and mix thoroughly, then serve.
