Serves 4-6 x 200ml bottles Drinks
Pour the gin into a large sterilised jar. Peel the clementines and add the peel only to the jar, keeping the flesh for a fruit salad.
Add all the remaining ingredients except the sugar, then give it a good shake. Leave for 10 days, giving it a good shake every time you pass.
Using sterilised equipment, strain the gin into a jug, discarding the peel and spices. Add the sugar and allow to dissolve. Dilute to taste with cooled boiled water, then decant into sterilised gift bottles.
Keeps for 6 months.
