Pour the oil into the balti dish and heat over a very hot flame until it starts sizzling. Add the onion and cook until it is translucent, then add the tomatoes, then the ginger and garlic purées.
Next add the chicken and mushrooms along with a sprinkling of water to prevent sticking. Stir then add the chilli, spices and salt to taste. Stir and keep over the heat until the chicken is cooked through. Taste and add more spice if you like. Sprinkle with coriander and fenugreek leaves. Serve with naan bread.
