Fried Manchego cheese

Ingredients

  • 200g Manchego cheese
  • 3tbsp plain flour
  • 1 egg
  • 85g fresh white or brown breadcrumbs
  • sunflower oil, for deep-frying

Method

Cut the cheese into six triangles, each about 1cm thick.

Place the flour in a polythene bag and season to taste with salt and pepper.

Break the egg into a shallow dish, add 1tsp water and beat.

Spread out the breadcrumbs on a large plate.

Toss the cheese pieces in the flour so that they are evenly coated. Dip the cheese in the egg mixture, then roll it in the breadcrumbs so that the pieces are coated on all sides.

Heat enough oil for deepfrying in a large, heavy-based frying pan or deep-fat fryer to 180-190°C/350-375°F. Add the cheese and fry for 1-2 minutes, until golden brown.

Using a slotted spoon, remove the fried cheese and drain well on kitchen paper. Serve immediately.
