Grilled figs with goat’s cheese, honey and walnuts

Ingredients

  • 40g walnut pieces
  • 8 large fresh figs
  • 100g rindless goat’s cheese, thinly sliced
  • 3tbsp clear honey
  • 4 large mint leaves, finely shredded

Method

Preheat the grill to medium-high. Spread the walnuts on a baking sheet and carefully toast them for a minute or two until lightly golden. Remove and leave to go cold.

Cut a deep cross into the top of each fig, about two-thirds of the way down to the base, then give each one a gentle squeeze to open it up slightly, like a flower. Divide the goat’s cheese among the figs and place them on a baking sheet. Grill for 3-4 minutes until the figs are soft and the cheese bubbling and lightly golden.

Lift the figs onto plates and drizzle a little honey over each one. Sprinkle over the walnuts and mint.
