Honey, fruit and nut flapjacks

Ingredients

  • 175g unsalted butter
  • 75g muscovado sugar
  • 75g clear honey
  • 250g rolled oats
  • 25g chopped walnuts
  • 75g chopped pecan nuts
  • 75g chopped semi-dry apricots

Method

Preheat the oven to 180°C/350°F/Gas 4. Melt the butter, muscovado sugar and clear honey in a largepan, stirring well until melted and mixed together.

Add the rolled oats, chopped walnuts, chopped pecan nuts and apricots, and mix well.

Spoon the mixture into a lightly greased baking tin, press down gently and bake for 25 minutes.

Remove from the oven and allow to cool before cutting into squares.
