Preheat the oven to 190˚C/375˚F/ Gas 5. Split the breads horizontally and arrange the goat’s cheese slices over the bases. Put them and the top halves separately on a baking sheet and bake for 5-6 minutes until the cheese is bubbling.
Meanwhile dry-fry chorizo slices until they start to shed their lovely red oil. Arrange the hot chorizo over the bubbling cheese, divide the rocket between the sandwiches, press the tops on and serve.
