Hot fig and vanilla butter puddings

Ingredients

  • 175g unsalted butter
  • 175g unrefined golden caster sugar
  • 3 eggs
  • 2tsp vanilla paste
  • 175g self-raising flour
  • 1tsp baking powder
  • 6 figs

For the topping

  • 6tsp unsalted butter
  • 2tsp vanilla paste

Method

Preheat the oven to 180˚C/350˚F/ Gas 4.

Cream together the butter and the golden caster sugar. Stir in the eggs and vanilla paste and then fold in the flour and the baking powder. Spoon the mixture into 6 small buttered pudding basins. Cut a cross in the top of each of the figs and push them into the pudding mixture.

To make the topping, mix the butter with the vanilla paste and divide the mixture between each of the pudding basins. Bake for 15 minutes.
