Mint and apple lassi

Ingredients

  • 4 green apples, peeled, cored and chopped, plus extra to serve
  • 650g Greek yoghurt
  • 2tsp caster sugar
  • 2tbsp Monin apple syrup (if unavailable, you can use apple juice and add 1tbsp more caster sugar to the mixture)
  • 15g mint leaves, plus extra sprigs to garnish
  • 2 handfuls ice cubes

Method

Place the chopped apple, yoghurt, sugar, apple syrup, mint and ice in a high-speed blender and whizz until smooth.

Spoon a little chopped apple in the bottom of four glasses and pour the lassi on top. Serve straight away, garnished with a mint sprig on the side.
