Serves 6 Sauces and accompaniments
Put all the ingredients in a blender and blitz until smooth, then season to taste. Use to dress a salad made with torn buffalo mozzarella, sliced nectarines and tomatoes, garnished with basil leaves.
Try it with a mixed tomato salad, topped with Parma ham, buffalo mozzarella, nectarine and basil (pictured).
