Makes 1kg reduced Starters and mains
Preheat the oven 110˚C/225˚F/Gas¼. Cut the tomatoes in half and place them on an oven tray, cut side up. Mix the salt and sugar together and sprinkle over. Put in the oven for 3½-5 hours depending on how you like them. If very dry, store in a sterilised jar and cover with extra virgin olive oil.
