Peach, honey and thyme dressing

Serves 6 Sauces and accompaniments

Ingredients

  • 2 peaches, stoned and cut into chunks
  • 4 thyme sprigs, leaves stripped
  • 1tbsp honey

Method

Put all the ingredients in a blender with 50ml water, salt and pepper; whizz until smooth, then season to taste.

Use to dress a fruity salad, such as chargrilled peach and poached chicken breasts with crushed roasted hazelnuts and watercress.
