Pisco sour

Ingredients

  • 50ml pisco quebranta
  • 15ml lime juice
  • ¼ of an egg white
  • 3 drops of bitters, preferably Peruvian Amargo

For the sugar syrup

  • 25g sugar
  • 12.5ml water

Method

Make the sugar syrup by bringing the sugar and water to a boil for a few minutes until syrupy, then leaving it to cool in the fridge.

Put the sugar syrup and the rest of the ingredients into a cocktail shaker, along with some ice, and shake vigorously for 8-10 seconds, or use a blender to whip until frothy. Strain into a chilled glass, shake 3 drops of bitters on top of the foam and serve.
