Pork tonkatsu

Ingredients

  • 50g plain flour
  • 1 egg, beaten with 1tbsp milk
  • 50g panko bread crumbs
  • 4 pork steaks, cut into 1.5cm width slices
  • vegetable oil for deep frying

To serve

  • Tonkatsu sauce

Method

Prepare 3 bowls: one with plain flour in, one with the egg and milk mixture, and one with bread crumbs. Coat the pork first with flour, then egg, then breadcrumbs.

Heat the oil to 180C/350F. Fry the coated pork to seal for about 15 seconds, then lower the heat to 160C/320˚F and cook for 3 minutes. Finally, heat back up to 180C/350F again to finish off, for about 20 seconds. This method prevents the breadcrumbs burning, while ensuring the meat is cooked through. Serve with tonkatsu sauce.
