Combine the Armagnac and shrub in a cocktail shaker filled with ice and shake until chilled. Double-strain into a tall glass filled with ice and top with soda water. Garnish with the raspberries and serve.
For the Raspberry shrub
Combine all the ingredients in the bowl of a food processor or blender and purée. Strain through a fine-mesh sieve into a non-reactive container, seal and store airtight in the fridge for up to 3 months.
