Gut the sardines if you wish. To make the garlic and herb oil, peel the garlic and slice it thinly.
Gently heat the olive oil, add the garlic until it takes on a golden brown colour, then add the herbes de Provençe.
Slice the baguette and grill on the barbecue. Cook the sardines over a high heat for 2-3 minutes on each side and remove the fillets using your fingers.
Dip the grilled bread in the garlic oil, arrange the sardine fillets on top and sprinkle with sea salt
