Sauteed Chestnuts With Maple Syrup

Ingredients

  • 50g smoked bacon, diced
  • 25g butter
  • 2 large garlic cloves, sliced
  • 1 cinnamon stick, lightly bashed
  • 1tbsp fresh sage, chopped
  • grated zest 1 lemon
  • 375g can cooked chestnuts or marrons
  • 100ml chicken stock
  • 1tbsp maple syrup
  • fresh sage leaves, to garnish

Method

Heat a frying pan until hot, add the bacon and cook over a medium heat until golden and starting to release the fat. Remove with a slotted spoon and set aside.

Add the butter to the pan and gently fry the garlic, cinnamon stick, sage and lemon zest for 5 minutes until starting to soften. Stir in the chestnuts and return the bacon to the pan, adding stock, maple syrup and some salt and pepper. Bring to the boil and simmer, covered for 10 minutes. Serve with a scattering of fresh sage leaves.
