Simple raspberry smoothie

Serves 2, or 1 large serving Desserts and puddings

Ingredients

  • 180g frozen raspberries
  • 4-5 soft dates, pitted
  • 2tbsp desiccated coconut, unsweetened
  • 250g plain unsweetened yoghurt
  • 1tbsp lemon juice
  • 100ml filtered water, if needed

You will need

  • 2 medium-sized or 1 large glass jar (pictured)

Method

Put all of the ingredients in a blender and whizz on a high speed until completely smooth. Depending on the strength of your blender, you may need to add a little water.

Taste and adjust the sweetness to your liking by adding more dates if necessary. Pour into 2 medium-sized glass jars or 1 large one and serve.
