Smoked mezcal margarita

Ingredients

  • 1 lime, halved (smoked if you like; see method below)
  • 15ml honey (smoked if you like; see method, below)
  • 1tbsp Tajin seasoning
  • 1 fine red chilli slice
  • 60ml mezcal

Method

Chill a whisky glass in the freezer while you smoke the limes and honey, if doing so.

To smoke, light a handful of good lumpwood charcoal on the barbecue, to one side. Once hot, add a small chunk of smoking wood such as cherry, or soaked chips, and place the grill rack on top. Put the lime halves on the grill and put the honey in a shallow heatproof dish on the grill rack, furthest away from the smoking wood and charcoal. Put the lid on and smoke with the vents open slightly for around 20 minutes.

Spread the Tajin seasoning on a small plate. Remove the glass from the freezer and wet the rim using 1 lime half (smoked, if you have done so). Squeeze 1tbsp lime juice from the other half. Lightly dip the rim in the Tajin and fill the glass with ice. Put the chilli slice, mezcal, lime juice and honey in a shaker with ice and shake vigorously. Strain and pour over the ice to serve.
