Soft baked cheese with boiled Jersey Royals

Ingredients

  • 500g small Jersey Royal potatoes, scraped or scrubbed
  • 1 good-quality Camembert (about 250g), boxed, or other mild washed-rind cheese

To serve

  • sea salt flakes small forks

Method

Preheat the oven to 180°C/160°F/ Gas 4. Put a pan of water onto boil and, when bubbling, add salt and the potatoes and boil for 12-15 minutes until tender, drain well. Meanwhile, take the paper wrapping off the cheese, then put it back in its box. Wrap the outside in tinfoil so the wood doesn’t split. Place on a baking tray and bake for about 20 minutes until warm and runny inside (test if it’s ready by pressing gently). Serve the baked cheese with a bowl of boiled potatoes and forks for dipping the potatoes into the cheese. Sprinkle each forkful with a little salt before eating.
