Tomatillo salsa

Makes 800g Sauces and accompaniments

Ingredients

  • 2 jalapeño chillies, roughly chopped
  • 2 large garlic cloves, crushed
  • 1kg fresh tomatillos, husked, washed and sliced in half
  • 1 shallot
  • 1⁄2 avocado, stoned and diced
  • 2tbsp chopped coriander leaves
  • juice 1 lime
  • 1⁄2tsp sea salt

Method

Put the chillies, garlic, tomatillos and shallot in a blender and pulse until smooth. Add the avocado and some water if the mixture is too thick, then fold in the coriander, lime juice and salt.
