Makes 1KG Sauces and accompaniments
Put the sugar and pods in a jar with a tight-fitting lid and set aside on a shelf to infuse for a few weeks.
You can add any used dry pods to the jar as and when you have them and top up with more sugar as you use it. The pods will harden over time but the sugar lasts for a long time.
You can also remove a few pods, add to a few tablespoons of the sugar and grind in a coffee grinder to icing sugar texture to dust cakes or desserts or in pastry and cake making.
