Watermelon, halloumi and za'atar salad

Ingredients

  • 225g halloumi (1 x block, cut into 1.25cm cubes
  • 50g black olives, stoned
  • 20g fresh green za’atar leaves, whole
  • 2 shallots, diced
  • 1tbsp sumac
  • juice 1 lemon
  • juice 1 lime
  • 6tbsp olive oil
  • 1⁄2tsp fresh chilli such as jalapeño (optional), finely diced
  • 1.35kg watermelon, deseeded and cut into 2.5cm cubes
  • 150g black grapes, seedless
  • 1 large or 2 small cucumbers, peeled and roughly chopped

Method

In a large bowl, combine the cheese, olives, za’atar leaves, shallots, sumac, lemon juice, lime juice, oil and chilli, if using. Season with salt. Arrange the watermelon, grapes and cucumber in a large serving bowl, add the cheese mixture, and serve.
