Wilted greens with garlic, shallot and lemon

Ingredients

  • 500g baby kale or other spring green, washed and dried
  • 4-5tbsp extra virgin olive oil
  • 1 garlic clove, finely chopped
  • 2 shallots, finely chopped finely grated zest of 1 lemon

Method

Remove any tough stalks from the kale or greens and shed the leaves if necessary.

When you are ready to serve, heat the oil over medium-high heat in a wok or other large pan with a lid, add the garlic, shallots and lemon zest and sauté for 1-2 minutes, add the kale, toss to coat, then cover and cook for 1-2 minutes or until just wilting. Season and serve.
