With some of the world’s best produce, it’s no surprise that Jersey has such a wealth of great restaurants and Steve Smith’s Bohemia sets the pace for the island. Few chefs have been as successful, first earning a Michelin star aged 24 then winning one at each restaurant he worked at for the next decade. After a stint in Melbourne (where he was awarded the Aussie equivalent of a star) he landed in Jersey, taking over from Shaun Rankin at Bohemia to serious fanfare. His food is well worthy of trumpets. In a room with lighting set between ‘first-date darkness’ and ‘half-strength tea light’, his food looks gorgeous, almost sexy. The first course on his tasting menu of sweet and sour grapefruit with black pepper and tarragon is nothing short of sensational, followed by crab with yuzu, pineapple and wasabi; another unlikely flavour combination that ticks all the boxes on the palate. Suckling pig loin with belly, Cevenne onion, prune and black pudding stole the show at main, with a sweetness undercut by the earthiness of the sausage. Wine is expensive, but excellent.
