There’s only one chef and one bartender at Cub, who partner up to create small, inventive plates and perfumed cocktails that work harmoniously together. The ten-course set menu (£67) will allow you to experience everything the restaurant has to offer, which come as a plethora of light, plant-rich creations. Stand-out dishes include whole broccoli with roasted garlic in a dashi broth and confit of leek with London fettle (a feta-like cheese) and lemon thyme. End with the Crème de Grasshopper cocktail, a velvety green martini that’s stirred with a mint chocolate matchstick to serve.
