Chef Douglas McMaster has created
what is claiming to be the UK’s first
zero-waste healthy-eating restaurant.
Choose between a Plant or Omnivore
menu that’s projected onto the walls,
while you nibble on 48-hour sourdough
bread dunked in green-herb oil served on
waxy crockery made from recycled plastic
bags. Opt for small plates such as ewe
tartare with daikon that’s bolstered by
horseradish, coddled egg with kimchi and black pudding, or an excellent pig’s
cheek with Yorkshire rhubarb. Round
things off with the mineral-packed
chocolate nib cake.
