Scandi minimalism meets global gourmet bolthole at this family-run hotel on Norway’s Bekkjarvik island. Rooted in a tradition of hospitality, it’s the brainchild of Bocus d’Or winner Ørjan Johannessen. Set on a hill overlooking the water, 20 stylish bedrooms are all pale wood, pared-back furniture and abstract objets d’art. The modern structure – brainchild of Ajas Mellbye – is inspired by the island’s rock formations and patterns of the sea. Rooms are decked out with accessories from local Fitjar Island, the rooftop terrace affords views of neighbouring Siggjo and Kongsen peaks, and activities might include hiking the Austevoll trails. Restaurant Mirabelle is worth the journey alone, though– expect refined island cuisine across a tasting menu of superlative local ingredients – and those looking for a deeper exploration can enrol in a class at the on-site academy.
