EAST Miami, part of the Hong Kong-based Swire Hotels group, opened
two years ago and has already walked off with three Miami Hospitality
Design Awards. At night, with the help of ingenious lighting, two busy bars
and an adventurous restaurant, the hotel becomes a place of dancing
colour. The 300 large rooms follow the same warm, minimalist design, and
include a slightly surreal view of the surrounding high rises through big
windows. Just before sunset, head to Sugar, the rooftop-garden bar,
which serves up magnificent views of downtown Miami and Biscayne Bay
alongside saké cocktails, steamed scallop dumplings and other Asian-
inspired nibbles. At the heart of EAST is Quinto La Huella, where chef
Nano Crespo produces the flavours of Uruguay in the asado – meats or
sometimes fish, grilled on a metal parilla over wood or charcoal with a skill
