Open the menu at Headlam Hall and you’ll be confronted with a lengthy list of local butchers, fishmongers and farmers who supply head chef David Hunter. Hunter’s commitment to these small-scale producers is in keeping with the independent ethos of this family-owned country house hotel – a classic Jacobean mansion with handsome staircases and panelled walls. The grandeur is complemented by all manner of modern conveniences, including a spa. In the restaurant, the thickly sliced pan-fried rump of Durham Dales beef is perfectly pink, served with velvety béarnaise and a portion of the thickest, fluffiest chips. Morning brings views across the walled garden and a pair of smoked Hartlepool kippers – all the fuel necessary for exploring the moors and crags of Teesdale.
