Il Salviatino Hotel

Via del Salviatino, 21 Fiesole, Firenze 50137, Italy

It’s impossible to tire of Florence. But its beauty can seem overwhelming, so escaping to Il Salviatino – a secluded mansion in the wooded hills of Fiesole on the outskirts – is just what the doctor ordered. The property has breathtaking views of the city and the Duomo, yet it’s far enough away to retreat from the madding crowds. Built in the 15th century but sensitively restored to 21st-century standards, the hotel has the look and feel of a private villa, with antiques and frescoes alongside mirrored TV screens and plunge pools. On arrival, you’ll be greeted at the door by your very own butler (there’s no front desk), who is then on call throughout your stay. The atmosphere is relaxed and discreet, and the decor elegant – sweeping Florentine stone staircase and mosaic floors. Each of the 45 rooms and suites has crisp white bed linen and contains rare pieces of art, such as a 12th-century Venetian sarcophagus bath. After an aperitivo on the terrazza, enjoy wild Grigio del Casentino pork, beef sirloin flavoured with Chianti herbs, and John Dory with fava beans, olives and green tomatoes. Doubles from €429.
