Constructed in 1569 as a military citadel right in the heart of the city, La Citadelle is now a handsome hotel and restaurant boasting Metz’s only Michelin star. With menus inspired by nearby forests and farms, chefs Christophe and Delphine Dufossé’s cuisine is an imaginative take on classic rural French cooking. Try their famous deconstructed quiche Lorraine, in which they replace the ham with Breton langoustine, and the mains of whole herb-grilled lobster or veal baked in a crust of Maldon sea salt. Rooms are decidedly modern, with bold colours and materials – think stone, glass and steel – pervading throughout, and you can relax in the cosy bar.
