It’s no secret that California’s wine country comes with some serious culinary clout. Emblematic is three-starred SingleThread, a hyper-regional restaurant poised on a plum corner spot in the heart of Healdsburg, Sonoma County. More than that, five contemporary apartment-style bedrooms pitched on the second floor and a rooftop garden make it, perhaps, the ultimate gourmet bolthole.

It’s the brainchild of husband and wife Katina and Kyle Connaughton, whose credentials include time in the kitchens of The Fat Duck and Michel Bras’ Hokkaido restaurant, Toya Japon. Such tenures inform every part of the SingleThread experience, which is built on the concept of omotenashi – an ethos of selfless hospitality ensuring guests’ every whim is preempted. It plays out in an experiential 11-course kaiseki-inspired menu fed by the seasons and heirloom ingredients from Katina’s SingleThread Farm – an ambrosial pile enveloped by rolling vineyards.

Open-plan bedrooms come with redwood beams, fireplaces, soaking tubs and a balcony. And, for something more intimate, you can opt for Kyle’s iconic in-room, four-course Donabe hot-pot supper. Best not to dine too late, though: an exciting multi-course breakfast awaits come morning – ideal to set you up for exploring the gorgeous landscape. While none of this comes cheap, it’s prime for special occasions – be sure to book early.
