From the locally sourced food on the menu, to the coasters made from recycled tyre and pencils from CDs, owner Caroline Gregory is doing everything she can to make this Victorian railway hotel on the banks of Loch Ness eco-friendly. Rooms are simply, classically adorned, and feature tea sets with the obligatory Scottish shortbread.
