Colbost Dunvegan Isle of Skye
It may be located in the north-west corner of Skye, a good deal away from much of anything, but not only is the journey here spectacular, upon arrival you’ll know it’s been utterly worthwhile. Shirley and Eddie Spear have owned and run the property for the past 27 years; head chef and director Michael Smith is now pushing it to the next level. His seven-course tasting menu shows off the best of the island’s produce – oysters with mint and cucumber; and fat scallops with gingerbread crust. Smith has reinvented Shirley’s famous marmalade pudding with Drambuie custard as a marmalade soufflé; this is almost worth the trip itself.
