Lime iced tea with borage flower ice cubes

Ingredients

  • borage flowers
  • 4 bags white tea (or use fresh leaves)
  • 2 limes, thinly sliced
  • honey or caster sugar, to taste
  • 1 lime, finely sliced
  • fresh mint leaves

Method

Several hours (or the night before) before you wish to use them, drop borage flowers into ice cube trays, fill with water and freeze.

Put the teabags or leaves into a pot with several lime slices and pour over boiling water. Give the lime slices a good squash with a spoon and leave to infuse for 2 minutes. Sweeten to taste, with honey or caster sugar. Pour the tea into a glass jug and add the remaining limes slices. Leave until very cold.

To serve, pour into tall glasses filled with ice cubes, and decorate with sliced lime and fresh mint.
