Ingredients

  • 45ml cognac
  • 15ml gin
  • 22ml fresh lemon juice
  • 22ml orgeat (almond syrup)

To garnish

  • orgeat and white granulated sugar, to rim
  • orange or lemon peel, cut in a long spiral (see Cook’s note)

Method

Rim a coupe glass by dipping it in a saucer of orgeat and another saucer of sugar, then set aside to dry.

Add the peel spiral to the glass. Put all the ingredients into a cocktail shaker with ice and shake for at least 15-20 seconds until well chilled and frothy. Strain into the glass and serve.


COOK’S NOTE To create a spiral, cut off both ends of a whole lemon or orange and peel off a single, long spiral.
