Bourbon Glazed Sweet Potatoes

Ingredients

  • 4 large sweet potatoes
  • 2tbsp maple syrup
  • 2tbsp bourbon
  • pinch of sweet paprika
  • grated zest of one lemon
  • 1tbsp butter

Method

Preheat the oven to 200°C/400°F/ Gas 6 and bake the sweet potatoes until they are just cooked through. This should take about 40 minutes.

As soon as they are cool enough to handle, peel them and cut them into largeish chunks. Mix together the maple syrup, bourbon, paprika and lemon zest. Put the sweet potatoes in a baking dish and pour over the bourbon mixture. Toss to coat, dot with the butter and then bake for a further 30 minutes.
