Burnt butter eggs and goats' cheese

Burnt butter eggs

Ingredients

  • 25g unsalted butter
  • olive oil, to fry
  • 1 garlic clove, finely sliced
  • 1/4tsp sweet smoked paprika
  • 2 large eggs
  • 50g goats' cheese
  • a few flat-leaf parsley sprigs, to garnish (optional)
  • focaccia or other soft, fresh bread to serve

Method

Put the butter in a small frying pan and place on a medium heat. Once it has melted, allow it to cook a bit further until it turns golden-brown and smells nutty. Add a drizzle of olive oil and the garlic to the pan. Cook for 1 minute and stir in the paprika, then crack in the eggs. Season with salt and pepper and fry for 4-5 minutes, spooning over the hot fat until the eggs are cooked through but the yolks are still a little soft or cooked to your liking.

Crumble the goats' cheese over the eggs. Transfer to plates, garnish with the parsley, if using, and serve with the bread.
